L\u2019\u00e9tat du couteau est  l\u2019un des facteurs de risques li\u00e9s aux sympt\u00f4mes de la douleur aux poignets, aux coudes et aux \u00e9paules. De plus, le couteau est notre principal outil de travail. S\u2019il ne coupe pas de fa\u00e7on satisfaisante les probl\u00e8mes <a href=\"http:\/\/www.cchst.ca\/oshanswers\/diseases\/rmirsi.html\" hreflang=\"fr\">musculo-squelettiques<\/a> se font sentir d\u00e8s la premi\u00e8re ex\u00e9cution de la d\u00e9coupe de viande.<\/p>\n<p><\/p>\n<p>Je suis responsable de l\u2019entretien de mon couteau tout au long de la journ\u00e9e. L\u2019entretien signifie de passer r\u00e9guli\u00e8rement mon couteau sur un fusil, lime fine qui permet de redresser et de recentrer le fil du tranchant du couteau<img decoding=\"async\" src=\"\/pgiroux\/public\/ok.jpg\" alt=\"le fil du taillant du couteau\" style=\"float:right; margin: 0 0 1em 1em;\" title=\"ok taillant, avr. 2010\" \/>. Cette \u00e9tape est consid\u00e9r\u00e9e comme la plus complexe et la plus difficile \u00e0 ma\u00eetriser.<\/p>\n<p><\/p>\n<p><strong><ins>Le but de la vid\u00e9o<\/ins>.<\/strong><\/p>\n<p><\/p>\n<p>La vid\u00e9o va au-del\u00e0 de la formation que peu donner l\u2019enseignant.
